There is a constant trope about french cuisine being extremely fattening.
It. Is. Not.
Yes, the more luxurious dishes include lots of cream and butter, but have you looked at an Alfredo sauce lately? There is an excellent book out there titled "French Women Don't Get Fat" and it's all about typical French cooking that is muchj higerer in vegetables and lower in simple carbs (baguettes) than you might think. And, it turns out, that the so-called "bad animal" fats are actually better for you than the processed plant-based oils.
A perfect example is the dish called "Steak Diane". It's a pan-roasted tenderloin steak (almost zero fat) with a pan sauce made from cognac, Dijon mustard, and a SMALL amount of heavy cream (50ml or so split between two people). Luxurious - yes. Fattening - no. However...
Robespierre makes a good point. Eating TO MANY baguettes and TOO MANY snails cooked in clarified butter and garlic (especially when both are combined) can lead to Fat Adssery... lol
